Farmland, woodland, hedgerows, gardens and orchards are all within reach of bees. This leads to an amazing diversity of flowers and plants, producing very flavoursome honey which changes with the seasons.

Harrison's Honey on BBC Radio Berkshire
I was recently interviewed by BBC Radio Berkshire, regarding 'hot honey' i.e. Chilli Honey. It was a good chat and allowed me to provide a few recipe ideas and promote wonderful local honey.
What people are saying about Harrison's Honey
Current Honey Batch - Summer Runny
Bees collect pollen from different plants throughout the year. As such, Harrison's Honey's colour, consistency and flavour will change as new batches are used. These batches are not mixed, ensuring that the terroir of the honey is noticeable.
Knowing where your honey has come from, and when, means that you can identify with the flavours and aromas within it.
The current batch, since Feb 8, 2021, is a thick golden and mellow summer honey.

It's all about the nectar!
Nectar collected from different plants makes different honeys:
some darker or lighter in colour; some of which will granulate
quickly and some of which will remain clear for much longer.
As a rule of thumb, the darker the honey; the stronger the flavour.
Farmland, woodland, hedgerows, gardens, orchards are all within reach of the bees. This leads to an amazing diversity of flowers and plants foraged for pollen and very flavoursome interesting honey that changes throughout the season.
What people are saying about Harrison's Honey
Should honey crystalise?
In short 'yes', if it's pure honey!
All pure honey will eventually crystallize due to the natural sugars in it. In fact, it's a sign of the quality and unprocessed nature of that particular honey.
Raw honey is more likely to granulate faster than highly processed, mass-produced honey found in most supermarkets.
In natural pure honey, the sugar molecules have more to attach to due, to the fact that the propolis, pollens and other inherent natural ingredients are still present and haven't been stripped out, through over-processing, in order to produce a uniform (colour, taste and consistency) and often bland product with a very long shelf life.
If your honey does crystallize (becoming thick and cloudy) over time, just remove the lid from the jar, place it in a pan of water. Warm it over low heat until the honey returns to its original consistency.
All honey granulates. In fact, this is best proof of its quality.
